Summer Pie topped with a crispy, caramelized oat layer

- 1 Pie form 22-26 cm in diameter
Ingredients
Berries
- 500 g berries (strawberry , raspberry, blueberry, blackberry) fresh or frozen
- 1 tbsp light muscovado sugar
- 2 tbsp Maizena
- 1 tsp ground cardamom
- 0,5 tsp vanilla powder
Crispy, Caramelized Oat Layer
- 175 g butter
- 1 dl granulated sugar I use raw cane sugar
- 1 pinch salt
- 3 dl rolled oats
- 1,5 dl flour freshly milled or store bought
- 1 tsp baking powder
- 0,5 dl light syrup
- 1 tsp ground cardamom
- 0,5 tsp vanilla powder
Instructions
- Preheat the oven to 180°C (356°F).
- Grease a pie dish, about 22–26 cm in diameter. Mix the berries with the muscovado sugar, maizena, cardamom, vanilla and place them in the dish.
- In a bowl, mix together granulated sugar, salt, rolled oats, flour, cardamom, vanilla and baking powder.
- In a saucepan, combine butter and light syrup and melt over low heat, stirring.
- Pour the butter mixture into the bowl with the oat mixture and stir to combine.
- Spread the batter evenly over the berries in the pie dish.
- Bake in the middle of the oven for about 30 minutes, or until the top is golden brown.
- Can be served warm or cold, store in the fridge.
